i don’t just love springtime because of the lovely cherry blossoms, i also love spring because it is the season of asparagus! roasted, in pastas, with goat cheese in a tart, in a frittata, in warm salads, i don’t care, i will eat them anywhere!
so, i had to head to the herbivoracious archives to see what magic michael has made with my green little friends. and of course, he didn’t disappoint! his recipe for roasted potato and asparagus tacos with kohlrabi slaw makes my mouth water just looking at it! he says i can use jicama for the slaw (dressed with a citrus dressing…he gets his at trader joe’s and i will happily take that shortcut!), wrapped in warm tortillas from vallarta and topped with avocado, cilantro and cotija cheese…
oh sorry, my mind drifted a bit…
…what results is a bright, fresh, springtime plate of deliciousness!
