i am going to try and give you an easy recipe every sunday (in case you are doing your marketing for the week) to make it simpler for you to enjoy a meatless monday. my boyfriend’s mom introduced me to the wonderful world of zov’s – a family owned restaurant here in southern california and the delicious dishes they prepare celebrating simple ingredients and flavors. here is her recipe for angel hair pasta with feta and pine nuts:
i will confess, i had every intention of making this dish yesterday. but living in a modern world, i ran out of time and didn’t make it to the market. so instead, for lunch we had this zov-inspired mediterranean pasta…
i made it with things i already had in the fridge and pantry: whole wheat rotini, julienned sundried tomatoes, sliced kalamata olives, garlic, dried organic oregano, crushed red chili pepper, canned organic diced tomatoes, canned organic garbanzo beans (rinsed and drained – the beans and the whole wheat together make a complete protein).
basically, you cook the pasta in salted water (until slightly under al dente as it will continue cooking since you are not rinsing it). saute the garlic, spices, garbanzo beans and both kinds of tomatoes in olive oil. add the kalamata olives. spoon the mixture onto the pasta and sprinkle with the feta.
protein pasta presto, lunch is served!
